Description

Tasting Notes:  The 2017 Mueller is a dark, dense, and well-structured wine, ideal for pairing with rich, savory foods.  The nose offers aromas of ripe black cherry with just a smidge of licorice and vanilla.  Bright red fruit and cassis fills out the palate.  Flavors of cedar, sweet anise, and earth develop nicely into a lengthy finish with hints of espresso.  Although impressive right out of the gate, the tannin profile is worth aging for those wanting to reflect on what “is” Diamond Mountain.

Blend: 90% Cabernet Sauvignon, 10% Petit Verdot

2017 Growing Season: The 2017 growing season on Diamond Mountain began with epic rainfall that lasted through April that caused havoc to our long, steep driveway.  Outside of a few heat-storms, the steady warm summer was exceptional for ripening the Cabernet Sauvignon and Petite Verdot growing in our small densely planted vineyard.  The warm days and cool nights ripened perfect healthy fruit, picked on September 26th, before the unfortunate and devastating wildfires.

Winemaking: Our winemaking is that of simplicity.  Our fruit is handpicked, gently destemmed and cold-soaked in tank for 72 hours prior to fermentation.  Once fermentation begins, the tank temperature is maintained at an optimal 84F and mixed twice a day.  Fermentation lasts for 12 days.  The wine is then pressed and moved to 65% new French Oak barrels for 20 months.
